A spice house the size of a two-car garage.

Copper Mesa Spice Trading Co. was started in 2014 by Janice Eaton, who got tired of throwing out cumin that smelled like sawdust.

2014 → today

It started with one bad batch of cumin.

Janice Eaton spent eleven years buying for restaurant kitchens on the Front Range. The recurring frustration was never price — it was that a five-pound bag of ground cumin arrived smelling of dust and cost the same as one that smelled like cumin. Nobody could tell her when it had been milled, because nobody had written it down.

In the spring of 2014 she bought sixty pounds of whole Guatemalan cardamom, a countertop stone mill, and a case of amber jars, and sold the first run out of the back of a station wagon to four chefs she already knew. The rule from day one was the one we still print on the label: the date it was ground goes on the tin.

Twelve years later Copper Mesa runs out of a modest facility on Sweetwood Drive in Golden with a team of six, nine contracted growers, and roughly fourteen hundred accounts — restaurants, small grocers, bakeries and a stubbornly loyal group of home cooks who buy four things a year and notice immediately if anything changes.

We have turned down three offers to co-pack for national brands. The volume would be good and the model would break. We would rather mill on Tuesday.

Milestones

How the business actually grew.

2014

Station wagon era

One mill, one spice, four wholesale accounts. Ground on Sunday nights in a rented commissary kitchen in Wheat Ridge.

2016

First direct contract

Signed a three-year cardamom agreement with a four-family cooperative in Alta Verapaz, Guatemala. Still our longest partnership.

2018

Sweetwood Drive

Moved into the Golden facility: cold room, dedicated mill room, and a packing bench that fits three people without anyone getting elbowed.

2020

Retail tins

Home-cook packaging launched during a year when nobody could eat out. It now accounts for about a third of what we mill.

2023

Lot-code lookup

Started publishing farm, harvest window and mill date against every lot code on request. Six years of records and counting.

2026

Nine growers, forty-one lots

Six employees, two mill days a week, and the same rule printed on every label as the first run in 2014.

What we hold to

Four commitments, written down so you can hold us to them.

Date everything

If it is ground, it carries a mill date in plain numerals. We would rather lose a sale to an older tin than hide the number.

Pay above index

Our contracted growers averaged a 34% premium over reference pricing in 2025, with advance payment at planting on six of nine contracts.

Never extend a blend

No rice flour, no salt bulking, no anti-caking agents in anything we mill. A blend is only the spices on the label, in the order listed by weight.

Six people: two millers, two packers, one buyer, one who does everything else.

We donate blend overruns to two Jefferson County food pantries each quarter.
