Why we exist

Most ground spice on a shelf is older than the dish you are making.

Ground coriander loses roughly half of its volatile oil within six months of milling. Warehouse spice is routinely a year or two past that point by the time it reaches a home cook. It is not spoiled — it is simply quiet.

We built Copper Mesa around a boring fix: buy less, mill often, and tell people the date. Our stone mill runs Tuesdays and Thursdays. Orders placed on a Monday usually ship against a batch milled the same week, and the lot code on the tin traces back to a named farm, a harvest window, and a moisture reading.

  • Whole-spice inventory only. Nothing is ground until it is allocated to an order or a wholesale standing account.
  • Nine grower relationships in Guatemala, Kerala, Aleppo, Kashmir and western Colorado — all bought on multi-year terms.
  • Every lot lab-checked for moisture and screened for foreign matter before it enters the mill room.

Bench to box

What happens between the farm and your kitchen.

No mystery steps. Five of them, and you can ask us about any one by phone.

Step 01

Direct purchase

We contract with growers ahead of harvest at a fixed floor price, then take delivery of whole spice in jute or vacuum-sealed cases. No spot-market brokers sit between us.

Step 02

Intake & testing

Each case is weighed, photographed, moisture-tested and given a lot code (e.g. CM-24-GC-07). Anything above target moisture is dried before storage, never after milling.

Step 03

Cold storage

Whole spice rests in sealed drums at 55°F in our Golden facility. Volatile oils stay locked inside the seed hull until the day of the grind.

Step 04

Batch milling

Tuesdays and Thursdays. Ten-pound batches on a chilled stone mill, sieved to a consistent grade, then rested twenty minutes so the aromatics settle before packing.

Step 05

Pack & ship

Amber glass or lined kraft tin, oxygen absorber, lot code and mill date on the label. Out the door within 48 hours, USPS or UPS Ground from ZIP 80401.

Traceable after the fact

Send us a lot code any time and we will tell you the farm, the harvest month, the mill date and the operator who ran the batch. We keep records for six years.

Sourcing

Nine farms. Names, not lot numbers.

Our cardamom comes from a four-family cooperative in Alta Verapaz that we have bought from every season since 2016. Our Aleppo pepper arrives through a Gaziantep miller who separates the crop by village. The thyme and dill are dried ninety minutes from our door on the Western Slope.

We publish what we pay relative to the commodity index, because the difference is the entire point: growers who earn a premium can afford to hand-sort, and hand-sorted spice tastes cleaner.

2025 average premium over the ICE reference price across all contracted lots: 34%. Advance payment at planting on six of nine contracts.

How fresh is “fresh”, exactly?

Every ground product ships within fourteen days of milling, and most within seven. The mill date is printed on the label, not encoded — you can read it without calling us.

Do you ship outside Colorado?

Yes. We ship to all fifty states from our Golden facility. Orders over $65 ship free via USPS Ground Advantage; everything else is flat-rate $6.90.

Can I visit the mill room?

By appointment. We are a working facility on Sweetwood Drive, not a storefront, but we host small groups most Friday afternoons. Email ahead.

What if I do not like something?
